stuff samosa recipe
Ingredients
For the Dough:
2 cups all-purpose flour (maida)
4 tbsp oil or ghee
½ tsp salt
Water, as needed
For the Stuffing:
2 medium potatoes, boiled and mashed
½ cup green peas (boiled)
1 small onion, finely chopped (optional)
2 green chilies, finely chopped
1 tsp ginger, grated
1 tsp cumin seeds
½ tsp mustard seeds
¼ tsp turmeric powder
½ tsp red chili powder
½ tsp garam masala
Salt, to taste
1 tbsp oil
Fresh coriander, chopped
For Frying:
Oil, enough for deep frying
Instructions
Prepare the Dough:
Mix flour and salt in a bowl.
Add oil or ghee and rub into the flour until it resembles breadcrumbs.
Gradually add water and knead into a firm dough.
Cover with a damp cloth and let it rest for 20–30 minutes.
Prepare the Stuffing:
Heat oil in a pan. Add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions, green chilies, and ginger. Sauté until onions are translucent.
Add turmeric, red chili powder, garam masala, and salt. Stir well.
Mix in mashed potatoes and boiled peas. Cook for 2–3 minutes.
Garnish with fresh coriander and let the filling cool.
Assemble the Samosas:
Divide the dough into small balls. Roll each ball into a thin oval or round shape.
Cut in half to make two semi-circles.
Shape each semi-circle into a cone, sealing the edge with a little water.
Fill the cone with potato-pea stuffing. Seal the top with water.
Fry the Samosas:
Heat oil in a deep pan.
Fry samosas on medium heat until golden brown and crisp.
Remove and drain excess oil on paper towels.
Serving Suggestion:
Serve hot with mint chutney or tamarind chutney.
